Mauro Hernandez Moreno, is the owner of Finca La Chiripa in the town of Puerto Rico in the Chiapas region. Mauro is a member of the CESMACH cooperative in Chiapas. This farm is a total of 5 hectares of which 4 are planted in coffee. The farm is certified organic and has a mix of shade trees helps create a growing environment conducive to quality production.
Coffee is harvested at peak ripeness, depulpled the same day, and fermented dry for a period of 24 hours. Once fermentation is complete, the coffee is washed twice and moved to a concrete patio where it is dried for an average of 5 days, depending on the weather.
