"I use the finest grind (8) possible on the Kitchen aide grinder. My objective is to have the cup resemble a meal in its body. I expect a cup, generally the first, to have a sandy texture. This is before the coffee has had a chance to settle any sediment it may have. Such cups do have a "bite" which you may identify as acidity. But with a dark roast, acidity is limited, purely by its nature. Therefore, a liberal dose of grindings results in a very full flavored, rich taste, not overly saturated with a caffeine shot that might "wire you." My first experience with Sumatra was in Jakarta at several , I think, five star hotels, that served a full bodied coffee, but mellow. I have not yet achieved that flavor, but the Sumatra you sell closely resembles that experience."

"Blind Assessment: The surprise here is how well this blend performs in longer milk drinks. As a straight espresso it is agreeable enough, dominated in the aromatics by low-toned, musty notes that read as a raisiny semi-sweet chocolate or perhaps a spicy, cantaloupe-like fruit. The body is medium to full, the finish simple and rich with a slight astringent edge. The blend exerted a powerful though heavy dark-chocolate presence in short milk, but with more latte-like quantities of milk it bloomed with great sweetness and vivacity."

We use a super-automatic Gaggia Titanium plus to prepare our espressos and were told that when using the Organico Dark roast, to put just enough beans in the hopper so that the beans do not remain more than a day in the hopper.
