"I use the finest grind (8) possible on the Kitchen aide grinder. My objective is to have the cup resemble a meal in its body. I expect a cup, generally the first, to have a sandy texture. This is before the coffee has had a chance to settle any sediment it may have. Such cups do have a "bite" which you may identify as acidity. But with a dark roast, acidity is limited, purely by its nature. Therefore, a liberal dose of grindings results in a very full flavored, rich taste, not overly saturated with a caffeine shot that might "wire you." My first experience with Sumatra was in Jakarta at several , I think, five star hotels, that served a full bodied coffee, but mellow. I have not yet achieved that flavor, but the Sumatra you sell closely resembles that experience."
